Liquid sucrose cannot be freeze-dried directly . However, if it is mixed with other ingredients such as maltodextrin, liquid sucrose can be freeze-dried into powder , or other drying methods can be used .
1. Why can’t liquid sucrose be freeze-dried alone?
Freeze drying (lyophilization) works by freezing a substance and then removing the water via sublimation. However, liquid sucrose (such as simple syrup) is extremely high in dissolved solids, mostly sucrose . Therefore, when you try to freeze dry it directly, the water does not completely sublime , resulting in a glassy, viscous mixture instead of a freeze-dried solid .

2. How to freeze-dry liquid sucrose correctly
Although pure liquid sugar cannot be freeze-dried, it can be achieved by mixing the syrup with a drying aid or carrier powder.

3. Which drying methods are suitable for liquid sucrose?
Since freeze drying doesn’t work well with pure liquid sugar, if your goal is to make a powdered sweetener from sucrose , spray drying is generally more effective with sugary liquids . Crystallization and grinding methods can also be used to make powdered sugar.
4. Is freeze drying the best method?
This is not always the case. Here is a simple comparison of different drying methods for some sugary products:

Spray drying and vacuum drying are more suitable for converting syrup into stable powder.
